Yummy Glazed Potato

I've started this blog to record and share the recipes of dishes which I love cooking and eating.

The recipe I'm kick starting this blog with, is that of 'Glazed Potatoes'. These tasty potatoes turned out to be a lovely compliment to a simple dinner of cheese omelet and toast.

What do I need??

2 Potatoes cut in bite size pieces.
1 tablespoon oregano
1 tablespoon Chilli flakes (or as per taste)
1 tablespoon white vinegar
Finely chopped coriander leaves
Finely chopped mint leaves
Black pepper to taste
Salt as per taste
Sugar as per taste
Olive oil

What are the steps??

1. Add a little salt in water and boil the potato pieces until half cooked.
2. Once done, add the vinegar, salt, sugar, chili flakes, oregano and a little pepper to the potatoes.
   Mix well and leave the mixture for about 15-20 minutes.
3. In a frying pan, add about 2 tablespoon of olive oil. Once heated, add the marinated potatoes.
4. Cover for a while until the potatoes are completely cook. Once cooked, leave them around until they have nice light brown colour.
5. Garnish with coriander and mint leaves

Serve with toast and omelet, sandwiches, pasta or pizza.
